Apple Bread

1 1/3 cups all-purpose flour
2/3 cup rye flour
½ cup sugar
2 teaspoons baking powder
1 ½ teaspoons cinnamon
½ teaspoon baking soda
½ teaspoon salt
1 ½ teaspoons Ener-G Egg
¾ cup apple juice
¾ cup sweetened applesauce
1/3 cup vegetable oil
½ cup chopped pecans

Preheat oven to 350 degrees. Grease two 8x4x2-inch loaf pans.

In a large bowl, combine the flours, sugar, baking powder, cinnamon, baking soda, salt and Ener-G Egg. In another bowl, whisk the apple juice, applesauce and oil until smooth. Stir into dry ingredients just until moistened. Fold in pecans.

Pour into prepared pans and bake 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool 10 minutes before removing to a wire rack to cool completely. Makes 2 loaves.
