3/4 cup firmly packed brown sugar 1 teaspoon ground cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon cloves 1/4 teaspoon salt 1 teaspoon grated lemon zest 1 teaspoon vanilla 2 cups graham cracker crumbs 1/2 cup margarine, melted 3 medium cooking apples, peeled & sliced (about 3 cups) 3 tablespoons lemon juice, divided 1/4 cup water, divided
Preheat oven to 350 degrees. Grease an 8-inch square pan and set aside.
Combine brown sugar, cinnamon, nutmeg, cloves, salt, lemon zest and vanilla; stir until blended and set aside.
Combine graham cracker crumbs and melted margarine. Firmly press 2/3 cup mixture on bottom of prepared pan. Top with half of the sliced apples and sprinkle with half of the sugar mixture. Sprinkle 1 tablespoon lemon juice and 2 tablespoons water over the top of the sugar mixture.
Top with an additional 2/3 cup crumb mixture. Top with remaining apples and remaining sugar mixture. Sprinkle with remaining 2 tablespoons each of water and lemon juice. Top with remaining crumb mixture.
Cover pan with aluminum foil and bake for 35-40 minutes or until apples are nearly tender. Remove foil, increase heat to 400 degrees and bake another 10 minutes or until lightly browned. Makes 4-6 servings.
