Preheat oven to 400 degrees. Line 12 muffin cups with paper liners.
In a large bowl, combine the flour, oats, sucanat, baking powder and cinnamon. In a medium bowl, combine the soy or rice milk, melted soy margarine, maple syrup and applesauce.
Add the wet mixture to the dry mixture and stir until just moistened. Gently fold in the chopped apple.
Fill each muffin cup about half full and top each muffin with a pecan half. Bake 20-25 minutes until a toothpick inserted in the center comes out clean. Cool on a wire rack.
