1/3 cup margarine 1/2 cup sugar 2 cups unbleached all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 2-3 ripe bananas, mashed 1/2 cup soy milk 1 teaspoon vanilla 1/2 cup chopped walnuts, optional
Preheat oven to 350 degrees.
Grease the bottoms and sides of an 8 1/2 x 4 1/2-inch loaf pan. Cream the margarine and sugar then stir in the flour, baking powder and baking soda. Add remaining ingredients and mix well. Pour into prepared pan and bake for 50 minutes. Makes 1 loaf.
