2 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup margarine 1 & 1/2 cups sugar 3 teaspoon Ener-G powder mixed in 4 tablespoons water 1 cup mashed, very ripe banana 3/4 cup rice milk 1 tablespoon vinegar 1/2 cup finely chopped nuts 1 teaspoon vanilla
Preheat oven to 350 degrees. Mix rice milk and vinegar. Let stand 10 minutes.
Sift together flour, baking powder, baking soda, and salt. Set aside.
Cream margarine until fluffy. Gradually beat in sugar. Add Ener-G Egg and beat well. Add bananas and beat again. Alternately add small amounts of flour mixture and the rice milk. Beat well after each addition. Add vanilla and mix well. Add nuts and mix well. Put into a greased muffin pan. Bake 20 minutes (40 minutes for Texas muffins) or until a straw comes out clean.
