Ericka's Biscuits & Gravy

Biscuits:
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup shortening or margarine
3/4 cup soy milk

Preheat oven to 425 degrees. Mix all dry ingredients. Cut in margarine using a fork or pastry cutter until well-mixed.Gradually add soy milk and work in with a spoon or your hands. Roll out on floured board to about 3/8". Fold over once and cut out 2-layer biscuits with the top of a glass. Place on baking sheet and bake for about 15 minutes.

Gravy:
2 tablespoons vegetable oil or margarine
3 tablespoons flour
2 cups vegetable broth or mushroom broth
fresh ground pepper to taste
1/4 teaspoon cayenne pepper (optional)

Bring 2 cups of vegetable broth to a boil. Heat oil on medium. Whisk in flour and cook on low to medium heat whisking constantly for 5 minutes, being very careful not to burn. Add hot broth while whisking and cook until it reaches the desired thickness. Season with as much fresh ground pepper as you can stand and a 1/4 teaspoon of cayenne.
