1 cup plus 1 tablespoon water 2 tablespoons olive or canola oil 1 tablespoon sugar/Splenda 1 teaspoon salt 2 tablespoons soy flour plus enough whole wheat or all-purpose flour to equal 2 ¾ cups 2 tablespoons gluten flour 1 package yeast
Place all ingredients in bread machine pan in the order recommended by manufacturer. Use the dough setting. Remove dough and form buns on a baking sheet lined with parchment paper. Using a biscuit cutter will keep buns uniform. Let rise one hour in a warm, draft-free area (placing sheet on the top rack of a cold oven with a pan of hot water underneath works well).
Once risen, remove baking sheet and water pan from oven. Preheat oven to 400 degrees and bake buns 10-12 minutes. Cool on a wire rack.
