Caramel Cookies

3 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1 cup margarine, melted
2 cups packed brown sugar
1 egg substitute*
1 teaspoon vanilla

In a bowl, combine flour, cream of tartar and baking soda. Set aside. In a large bowl, beat together the melted margarine and the brown sugar. Beat in the egg substitute then the vanilla. Gradually blend in the dry ingredients. Shape the dough into a roll measuring 2" in diameter. Wrap in wax paper or tinfoil and refrigerate at least 4 hours or overnight.

Preheat oven to 375 degrees. Lightly grease two cookie sheets. Slice cookie dough roll into 1/4" thick slices. Put slices 1" apart on the cookie sheets. Bake 8-10 minutes until lightly browned. Cool on wire racks.

*( I use 1 tablespoon oil, 1 tablespoon water and 1 teaspoon of baking powder mixed together as an egg substitute in this recipe.)
