1 tablespoon margarine 1 pound soy “chicken” alternative of choice ¼ cup diced onion ½ teaspoon ground cumin ¼ cup chopped pecans 3 tablespoons soy sour cream 1 cup shredded soy cheddar or Mexican cheeze salsa shredded lettuce 4 10-inch flour tortillas
Melt margarine in a large skillet; sauté soy “chicken”, onion and cumin till warmed through and onion is tender-crisp. Reduce heat to low. Add pecans and soy sour cream and heat through.
Spoon ¼ of “chicken mixture down the middle of each tortilla; top with cheeze, salsa and shredded lettuce if desired. Fold up tortilla and serve.
