1 cup soy margarine, at room temperature 1 cup brown sugar 2 teaspoons vanilla extract 2 cups unbleached flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1/4 cup cold water 1-1/2 cups semisweet chocolate chips 1 cup chopped walnuts
Preheat oven to 350 degrees. Lightly grease a cookie sheet.
With an electric mixer, beat the margarine until smooth. Add the sugar and vanilla and continue to beat until well blended. Mix in the baking powder, salt and flour and beat thoroughly. Add the water, and continue to beat. Stir in the chocolate chips and walnuts, mixing well with a spoon. Roll the dough into 1-inch balls, place carefully on the cookie sheet, and press down to flatten to about one-half inch thick. (Cookies will spread very little during baking.) Bake for 10 minutes then remove with a spatula to a wire rack to cool. Makes about 50 cookies
Variations: Use a half-cup of raisins in place of half the walnuts or replace all the walnuts with pecans.
