Chocolate Peanut Butter Bars

4 cups quick cooking oats
1 cup packed brown sugar
2/3 cups melted margarine
1/2 plus 2/3 cup peanut butter, divided
1/2 cup light corn syrup
1 teaspoon vanilla
1 18-ounce package vegan chocolate chips
1 cup chopped peanuts

Preheat oven to 375 degrees. Grease a 13x9-inch baking pan.

In a large bowl, combine oats, brown sugar, margarine, 1/2 cup peanut butter corn syrup and vanilla. Press into prepared pan. Bake 12-14 minutes until bubbly around edges.

In a microwave safe bowl, melt chocolate chips; stir until smooth. Stir in chopped peanuts and remaining peanut butter; spread over oat mixture. Refrigerate at least one hour before cutting. Makes two dozen bars.
