Chocolate Zucchini Bread

5 teaspoons Ener-G Egg replacer
¼ cup water
1 cup of vegetable oil
2 cups sugar
1 tablespoon vanilla
2 cups peeled, seeded, shredded zucchini
2 ½ cups all-purpose flour
½ cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon baking powder

Preheat oven to 350 degrees. Grease two loaf pans.

In a large bowl, combine Ener-G Egg, water, oil, sugar and vanilla. Mix well until creamy and immediately stir in zucchini.

Combine dry ingredients and add to wet ingredients. Mix well. Pour into prepared pans and bake 55 minutes. Makes two loaves.
