Biscuits: 2 cups flour 1/4 cup shortening or margarine 1 tablespoon baking powder 1 teaspoon salt 3/4 cup soy milk
Preheat oven to 425 degrees. Mix dry ingredients. Fold together with margarine using a fork or pastry cutter until well-mixed. Gradually add soy milk and work in with a spoon or your hands. Roll out on floured board to about 3/8". Fold over once and cut out the 2-layer biscuits with the top of a glass. Place on baking sheet and bake for about 15 minutes.
Gravy: 3 cups soymilk or rice milk 4 teaspoons cornstarch 1 tablespoon vegetarian 'chicken' bouillon powder or vegetable bouillon powder 1/2 teaspoon sugar or equivalent Salt to taste 1/4 teaspoons coarsely ground black pepper
Mix all ingredients well in a saucepan. Heat to almost boiling over medium heat, stirring constantly. Turn heat to low. Cook, stirring constantly, until gravy is thick and translucent. Serve.
