Fudge

6 tablespoons soy margarine
3 1/2 cups confectioner’s sugar
1/2 cup sifted cocoa powder
1 tablespoon vanilla
1/4 cup rice or soy milk
1 cup nuts (optional)

Lightly grease a 5x9 inch square baking pan.

Place all ingredients (except the nuts if using) in the top of a double boiler over simmering water and stir until smooth. Add nuts if desired. Pour into pan and chill. Cut into squares and serve.
