Grilled Tofu over Sauteed Spinach

1 pound tofu, frozen and thawed
1-2 tablespoons olive or canola oil
1 tablespoon cider vinegar
1 garlic clove, minced
1 teaspoon thyme
1/2 teaspoon oregano
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
dash pepper

Press excess moisture out of tofu and cut into large dice. Combine remaining ingredients in a plastic bag and mix well. Marinate tofu for one hour.

Preheat oven to 450 degrees. Place tofu in a baking dish coated with cooking spray and bake for approximately 7 minutes per side. Serve over sauteed spinach.

Sauteed Spinach

1 green onion, finely chopped
1-2 cloves garlic, minced
1-2 tablespoons olive or canola oil
1/2 pound sliced fresh mushrooms
1 10-ounce package fresh torn spinach

In a large skillet, saute onion and garlic in oil for 1 minute. Stir in mushrooms; saute 3-4 minutes or until tender. Add spinach; saute 2 minutes or until wilted. Transfer to a serving plate. Makes 4 servings.
