Grits

4 cups water
2 cups yellow corn grits
1 teaspoon salt
1 tablespoon soy margarine

Bring water to a boil in the top of a double boiler. Add margarine, salt and grits and stir to combine. Cover and simmer 4-6 minutes, stirring occasionally.

Leftovers may be stored in a grease loaf pan, chilled and slice to be fried.
