4 cups unseasoned bread cubes 1/4 cup minced fresh or 2 tablespoons dried parsley 2 tablespoons nutritional yeast 1/4 teaspoon dried sage 1/4 teaspoon dried thyme 14 teaspoon dried marjoram 18 teaspoon ground or 1/4 teaspoon crumbled dried rosemary 1/8 teaspoon pepper 1/2 cup chopped onions 1/2 cup coarsely chopped walnuts 1/2 cup sliced mushrooms 1/2 cup finely chopped celery 1/2 cup chopped apple 2 tablespoons tamari 1-2 tablespoons olive oil 1/2 cup boiling water or vegetable broth
Preheat oven to 350 degrees. Spray a 2-quart casserole dish (one with a lid) with nonstick cooking spray and set aside.
Place bread cubes in a large bowl. Place parsley, nutritional yeast, herbs and pepper in the bowl with the bread cubes and toss to combine. Add the onions, walnuts, mushrooms, celery and apple and toss again to combine.
Add the tamari and the olive oil to the boiling water or vegetable broth and pour this hot liquid over the bread cubes. Toss thoroughly. If mixture is a too dry, add a little additional water or broth.
Pack bread cube mixture into prepared casserole dish and cover with lid. Bake for 20 minutes, remove lid and bake for 10 minutes longer. Makes 4 servings.
