Crust: 1 cup unbleached white flour ½ cup vegan margarine ¼ cup powdered sugar
Topping: 1 cup sugar grated zest of 1 lemon 3 tablespoons lemon juice ¼ teaspoon salt ½ cup unsweetened applesauce 1 ½ teaspoons baking powder
Preheat oven to 350 degrees.
In a medium bowl, combine crust ingredients and mix to a coarse, mealy texture. Press mixture into a 9-inch square baking pan, making a raised ½-inch rim around sides. Bake until set but not brown.
While crust is mixing, make topping: In same bowl, stir together sugar, lemon zest, juice and salt. In a small bowl, combine applesauce and baking powder, whisking until well blended.
When crust is done, stir applesauce mixture into sugar mixture. Pour topping over hot crust and bake 50 minutes or until center is slightly firm to touch. Cool completely before cutting into bars.
