Morning Glory Muffins

2 cups whole wheat pastry flour
2/3 cup oil
1 cup sugar
3 teaspoons Ener-G Egg powder dissolved in 1 cup of water
1/2 cup chopped walnuts
2 cups grated carrots
3/4 cup raisins
2 teaspoons cinnamon
1/2 teaspoon salt
2 teaspoons baking soda

Preheat oven to 350 degrees. Grease muffin tins or line with paper liners.

Mix the oil and the Ener-G Egg in a small bowl. Mix all the dry ingredients in a large bowl. Add Ener-G Egg mix to dry mix and stir. Fold in grated carrots, raisins and walnuts. Bake 35 to 45 minutes. Makes one dozen. These freeze well.
