Oven Roasted Tofu "Turkey"

1 pound tofu, cut into 1/2 inch slices

Marinade:
3/4 cup water
3 tablespoons tamari
3 tablespoons nutritional yeast
1/2 teaspoon poultry seasoning
1/2 teaspoons corriander
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Coating:
1/2 cup flour
1/4 cup cornmeal
1/4 cup nutritional yeast
1/2 teaspoon onion powder
1/2 teaspoon salt
1/8 teaspoon pepper

Arrange tofu slices in a single layer in a baking dish. Whisk all marinade ingredients together and pour over tofu. Turn tofu so all slices are evenly covered. Cover baking dish with plastic wrap and refrigerate at least two hours or up to overnight, turning slices occasionally.

Preheat oven to 400 degrees. Coat a baking sheet with cooking spray. Mix coating ingredients in a shallow dish. Remove each slice of tofu from the marinade and dredge it in the coating mix. Arrange coated slices in a single layer on the prepared baking sheet. Mist the tops of the slices with cooking spray.

Bake until bottom of slices are golden, about 15 minutes. Turn slices over and bake until other side is golden, approximately another 15 minutes.
