1 & 1/2 cups sugar 1 cup shortening or margarine, creamed until soft Ener-G Egg Replacer for 2 eggs, prepared 2 & 3/4 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/2 teaspoon salt
Topping: 2 tablespoons sugar 2 teaspoons cinnamon
In a large bowl, cream the shortening or margarine with the 1 1/2 cups sugar. Mix in the Ener-G. Stir in flour, cream of tartar, baking soda and salt. Chill dough for at least two hours.
Preheat oven to 375 degrees. Roll dough into walnut-sized balls. In a small bowl, combine the sugar and cinnamon. Roll cookies in this mixture. Put 2 inches apart on an ungreased cookie sheet lined with baking parchment. Bake for 8 -10 minutes. Cool completely on wire racks.
