2 pounds (about 4 medium) yellow summer squash, thinly sliced 1 medium onion, minced 1/3 cup soy sour cream Ener-G for 1 egg, prepared 4 tablespoons melted margarine 2 teaspoons sugar 1/2 teaspoon salt 1/3 cup bread crumbs
Steam onion over the top of a double boiler until tender; set aside. Steam squash over the top of the double boiler until tender. Mash in a large bowl until almost smooth; Drain out any excess liquid. Set aside.
Preheat oven to 375. Mix onion, sour cream Ener-G Egg, 2 tablespoons margarine, sugar and salt into mashed squash. Stir in steamed onions.
Pour mixture into an 8" baking dish. Sprinkle bread crumbs on top and drizzle with butter. Bake 45 minutes. Let stand 10 minutes before serving. Serves 4-6.
