1 pound firm or extra-firm tofu 1/4 cup soy flour 2 tablespoons whole wheat flour 2 tablespoons arrowroot powder 2 teaspoons paprika 1/2 teaspoon garlic powder 1/4 teaspoon pepper 1/4 teaspoon ginger powder 3 tablespoons tamari 1/2-1 cup onion, very finely chopped 1 green onion, very finely chopped 2 tablespoons vegetable oil
Press excess water out of tofu and place in a bowl. Combine the soy flour, whole wheat flour, arrowroot powder, paprika, garlic powder, pepper and ginger powder and mix well. Add the flour mixture to the tofu along with the tamari and mash together with a potato masher until well mixed. Add the onion and green onion and knead, with your hands, until well blended and mixture holds together. Let stand for 20 minutes.
Form mixture into 4 patties. Heat the oil in a skillet over medium heat. Add the patties and cook for 7 minutes. Turn over and cook 7 minutes more. Serve on hamburger buns. This mixture also makes good spaghetti "meatballs".
